Pie


A pie is a baked dish which is usually made of a pastry dough shell that covers or completely contains a filling of various sweet or savoury ingredients. Pies can be either "filled", where a dish is covered by pastry and the filling is placed on top of that, "top-crust," where the filling is placed in a dish and covered with a pastry/potato mash top before baking, or "two-crust," with the filling completely enclosed in the pastry shell. Pies can be a variety of sizes, ranging from bite-size to ones designed for multiple servings.

So-called “pyes” originally appeared in England as early as the 12th Century, but the word “pie” is not attested in the Oxford English Dictionary until the 14th century.

Cakes


Cake is a form of food that is usually sweet and often baked. Cakes normally combine some kind of flour, a sweetening agent (commonly sugar), a binding agent (generally egg, though gluten or starch are often used by vegetarians and vegans), fats (usually butter, shortening, or margarine, although a fruit purée such as applesauce is sometimes substituted to avoid using fat), a liquid (milk, water or fruit juice), flavors and some form of leavening agent (such as yeast or baking powder), though many cakes lack these ingredients and instead rely on air bubbles in the dough to expand and cause the cake to rise. Cake is often frosted with buttercream or marzipan, and finished with piped borders and crystallized fruit.

Cake is often the dessert of choice for meals at ceremonial occasions, particularly weddings, anniversaries and birthdays. There are literally millions of cake recipes (some are bread-like and some rich and elaborate) and many are centuries old. Cake making is no longer a complicated procedure; while at one time considerable labor went into cake making (particularly the whisking of egg foams), baking equipment and directions have been simplified that even the most amateur cook may bake a cake.

Panettone


Panettone (Milanese: panetton classical orthography, panetùn other orthography) is a typical bread of Milan, usually prepared and enjoyed for Christmas and New Year around Italy, and one of the symbols of the city. Maltese nationals are also traditionally associated with this sweet bread. In Latin America, especially in Bolivia and Peru, it is a Christmas dinner staple.

It has a cupola shape which extends from a cylindrical base and is usually about 12-15 cm high for a 1 kg panettone. Other bases may be used, such as an octagon, or a frustum with star section shape more common to pandoro. It is made during a long process which involves the curing of the dough, which is acidic, similar to sourdough. The proofing process alone takes several days, giving the cake its distinctive fluffy characteristics. It contains candied orange, citron and lemon zest, as well as raisins, which are added dry and not soaked. Many other variations are available such as plain or with chocolate . It is served in slices, vertically cut, accompanied with sweet hot beverages or a sweet wine, such as Asti or Moscato. In some regions of Italy, it is served with Crema di Mascarpone, a cream made from mascarpone cheese, eggs, dried or crystallised fruits and typically a sweet liqueur such as Amaretto; if mascarpone cheese is unavailable, zabaglione is sometimes used as a substitute to Crema di Mascarpone.

The most famous producers were Motta, Bauli, Loison Pasticceri, Alemagna and Tre Marie.

Efforts are underway to obtain Protected Designation of Origin and Denominazione di origine controllata status for this product, but as of late 2008, this has not occurred. Italian Agriculture Minister Paolo De Castro is looking at ways to protect the real Italian cakes from growing competition in Latin America and whether they can take action at the World Trade Organisation.

Fruitcake


The earliest recipe from ancient Rome lists pomegranate seeds, pine nuts, and raisins that were mixed into barley mash.

In the Middle Ages, honey, spices, and preserved fruits were added and the name "fruitcake" was first used, from a combination of the words "fruit" (Latin: fructus, Old French: frui), and "cake" (Old Norse: kaka, Middle English: kechel).

Fruitcakes soon proliferated all over Europe, however recipes varied greatly in different countries and throughout the ages, depending on the available ingredients as well as in some instances on church regulations of the use of butter, regarding the observance of fast (e.g. "Butterbrief" or butter letter by Pope Innocent VIII). Pope Innocent VIII, (1432 – 1492), the Holy Father softened his attitude and in 1490, he sent a permision known as the “Butter Letter” to Saxony, stating that milk and butter could be used in the North German Stollen fruitcakes.

Starting in the 16th century, sugar from the American Colonies, and the discovery that high concentrations of sugar could preserve fruits, created an excess of candied fruit, thus making fruitcakes more affordable and popular.

In the 18th century in some areas in Europe, fruitcakes were made using nuts from the harvest for good luck in the following year. The cake was then saved and eaten before the harvest of the next year.

The fruitcake also remained popular at Victorian Teas in England throughout the 19th century.

Crepes recipe

Ingredients:
4 egg whites.
1 cup of all-purpose flour.
1 cup of milk.
1 tablespoon of powdered sugar.
1 teaspoon of baking powder.
Pinch of salt.

Preparation Instructions:
In a bowl, sift together all of the dry ingredients, then make a well in the middle.
In a different bowl, beat the egg whites; then add the remaining liquid ingredients.
Mix the contents of the two bowls together throughly.
Lightly coat a frying pan or skillet with cooking oil. Heat the pan over medium-high.
Pour enough batter into the pan to make one crepe.
Cook, turning once when browned on the bottom.

Yummy Blueberry Pancakes recipe

Ingredients:
1 cup of wholewheat flour.
½ cup of milk.
½ cup of canned blueberries, with juice.
1 tablespoon of sugar.1 teaspoon of baking powder.
¼ teaspoon of salt.
¼ teaspoon of baking soda.Cooking oil.

Preparation Instructions:
Mix together all ingredients thoroughly except the blueberries and milk.
Add the milk and blueberries.
Coat a suitably sized nonstick pan with cooking oil.
Heat up.
Add the batter to the pan and cook until golden, turning once.
Serve.

Sushi Pancakes recipe

Ingredients:
4 eggs.
2 tablespoons of water.
½ teaspoon of salt.
1 tablespoon of vegetable oil.

Preparation Instructions:
Beat the eggs with the water and salt.
Cook on a low heat in a lightly oiled pan to make 8-9 (thin) pancakes.
Eat with a range of Sushi.

Cherry Crepes recipe

Ingredients:
1/3 cups of Brown sugar.
1 cup of Pancake mix.
1 cup of Sour cream.
1 x Egg.1 cup of Milk.
1 can Cherry pie filling.

Preparation Instructions:
1. Mix the sour cream and brown sugar; set aside.
2. In a seperate bowl, combine the pancake mix, egg and milk.
3. Heat and oil a 6" skillet. Fry 2 tablespoons of pancake mixture at a time until light browned on both sides.
4. Fill each crepe with some of the sour cream mixture and roll.
5. Place each crepe seam side down in baking dish. Pour the cherry pie filling over.
6. Bake at 350 F for 5 minutes.

Blueberry Pancakes recipe

Ingredients:
2 large eggs.
2 cups of milk.
2 cups of flour.
½ cup of blueberries.
4 tablespoons of vegetable oil.
2 tablespoons of sugar.
2 tablespoons of baking powder.
2 teaspoons of vanilla.
Pinch of salt.

Preparation Instructions:
Whisk the two large eggs until they are fluffy.Add the milk, flour, blueberries, vegetable oil, sugar, baking powder, vanilla and salt. Whip until smooth.Heat up a skillet over medium heat.For each pancake, pour ¼ cup of the batter into the hot skillet. Cook the pancake until puffed and dry around edges. Turn and cook until it turns golden brown.Serve.

Sus Layar's Strawberry

Bahan :
  • Kulit :
    • 300 gram Air
    • 125 gram Mentega
    • 1/2 sdt Garam
    • 1 sdm Gula pasir
    • 150 gram Tepung terigu
    • 5 butir Kuning telur
    • 2 butir Putih telur
  • Cream :
    • 200 ml Whipping cream bubuk
    • 250 ml Susu dingin
    • 100 gram Selai strawberry
    • 100 gram Strawberry segar dipotong-potong
    • 2 tetes pewarna merah

Cara Membuat:

  • Rebus air, mentega, garam dan gula hingga mendidih
  • Kemudian masukkan tepung, aduk hingga rata dan kalis, angkat, sisihkan.
  • Setelah adonan agak dingin, masukkan telur satu persatu sambil dikocok dengan mixer hingga adonan halus.
  • Masukkan dalam kantong plastik dan lubangi ujungnya.
  • Ambil loyang, olesi dengan mentega, kemudian buat bulatan seperti obat nyamuk berdiameter 12 cm diatas loyang tersebut, kemudian oven dalam temperatur 180C selama 15 menit, bakar hingga selesai banyak 15 lembar.

Chocolate Butter Cookies


Bahan-bahan :
600 g tepung terigu protein sedang / cap kunci
400 g mentega
300 g gula halus
50 g tepung maizena
60 ml susu kental manis coklat
100 g coklat bubuk
2 butir kuning telur
½ sdt soda kue

Isi:
250 g kacang mete / tanah cincang

Cara Membuat :
1. Kocok mentega, susu kental manis, kuning telur dan gula halus menggunakan mixer hingga lembut (2 menit).
2. Di tempat terpisah, campur dan ayak tepung terigu, tepung maizena, cokelat bubuk dan soda kue.
3. Masukkan campuran tepung terigu ke dalam kocokan mentega, aduk menggunakan sendok kayu / spatula plastik hingga tercampur rata. Tambahkan kacang mete / tanah cincang, aduk hingga terbentuk adonan yang menyatu.
4. Ambil satu sendok adonan, dan letakan di atas loyang beroles margarin. Tekan-tekan permukaanya menggunakan punggung garpu.
5. Panggang adonan di dalam oven bertemperatur 150 C selama 30 menit atau hingga kue matang. Angkat. Dinginkan.
6. Kemas kue dalam stoples kedap udara atau kantung plastik. Kue siap dipasarkan.

Untuk ± 1750 g

Catatan :
Agar harga kue lebih murah, ganti mentega dengan margarin, kacang mete diganti kacang tanah dan separuh bubuk coklat bisa diganti dengan 1 sdt pasta coklat atau 3 tetes pewarna coklat tua.

Tiramisu Cookies


Bahan-bahan:

125 gr Krim keju
150 gr Mentega
125 gr Gula halus
1 butir Kuning telur
325 gr Tepung terigu
1 sdt Baking powder

Bahan isian:
50 gr Mascarpone
1 sdm Rum
½ sdt Kopi instan
1 sdm Madu
150 gr Dark chocolate, lelehkan

Bahan topping:
100 gr Cokelat putih , lelehkan
50 gr Dark chocolate, serut kasar

Cara membuat :
* Cookies: Kocok krim keju, mentega dan gula halus hingga lembut. Masukkan kuning telur, kocok kembali hingga rata, tambahkan tepung terigu dan baking powder, aduk rata.
* Masukkan adonan ke dalam plastik segitiga, semprotkan ke dalam loyang yang telah diolesi margarin, panggang dalam oven selama 20 menit atau hingga kuning keemasan. Angkat dan dinginkan.
* Isian: Kocok mascarpone hingga lembut, masukkan bahan lainnya, aduk rata.
* Ambil satu buah cookies, olesi bagian belakang cookies dengan bahan isian. Tumpukkan satu cookies lagi di atasnya, beri cokelat putih leleh di atasnya, taburi cokelat serut, biarkan mengeras.
